You never have to kill the plant to get ginger! After about 4–6 months of growth, the plant will have established new rhizomes you can harvest partially.
- Gently dig around the edge of the plant with your fingers.
- Locate a mature piece of rhizome.
- Snap off what you need and leave the rest of the main root intact.
- Re-cover the exposed root with soil.
