- Preheat & Prepare: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- Make the Filling: In a small bowl, beat the softened cream cheese with sugar, egg yolk, and vanilla until smooth and creamy. Set aside.
- Mix the Batter: In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the melted butter, milk, egg, and vanilla.
- Combine & Fold: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Gently fold in the cranberries.
- Assemble the Loaf: Pour half of the batter into the prepared loaf pan. Carefully spoon the cream cheese filling in a line down the center of the batter. Pour the remaining batter over the top, making sure it covers the filling completely.
- Bake: Bake for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. If the top starts to brown too quickly, you can cover it loosely with foil.
- Cool & Serve: Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve. The loaf is delicious on its own, but a sprinkle of powdered sugar or a simple glaze can make it even more stunning.
